Japanese Cold Tomato Sauce Pasta

Do you want to eat something cold and filling on a hot summer day? Then this is Japanese Cold Tomato Sauce Pasta is the perfect dish for that occasion!

Ingredients (Serving Size: 2)

  • 2 tomatoes
  • 2 servings of angel hair pasta, spaghetti or other pasta
  • 3 cloves of garlic
  • 2 tbsp olive oil
  • 1 tsp lemon juice
  • 1 tsp soy sauce
  • A pinch of freshly ground black pepper
  • A sprinkle of konbu dashi stock
  • 1/4 tsp tobanjan spicy miso paste (optional)
  • 1/2 tsp. basil (optional)
  • Grated parmesan cheese or pecorino romano cheese (optional)

How to Make Japanese Cold Tomato Sauce Pasta

  1. Mince the garlic into tiny pieces
  2. Chop up the tomatoes into small pieces
  3. Heat up the olive oil on low heat, and add garlic and (optionally) tobanjan spicy miso paste
  4. Stir occasionally to cook the garlic and tobanjan evenly until the garlic pieces turn golden brown.
  5. Add the cut tomato pieces to the pan and mix lightly so the oil and tomato pieces get coated evenly.
  6. Transfer to a bowl and add lemon juice, soy sauce, black pepper and konbu dashi stock and mix until they’re incorporated. This is the ‘sauce’ for this dish.
  7. Let the sauce cool off to about room temperature, then place the bowl in a fridge.
  8. Boil the angel hair pasta until it becomes soft.
  9. Drain the pasta to a strainer and rinse it with cold water until the noodles cool down completely.
  10. Shake the strainer a few times to get the excess water out
  11. Add the pasta to the cooled down sauce and mix them together.
  12. (Optional) Sprinkle on cheese and basil on top
  13. Serve and enjoy!

What is Dashi Stock?

Dashi stock is widely used in Japan for soups and other meals as a soup base. We’re using just a little bit of this to enhance the flavor of the dish. The Konbu is a type of seaweed that is commonly used to extract umami, and the dashi stock made from it has a very pleasant flavor.

How spicy is this dish?

If you prefer to make this dish without any spiciness, you can feel free to remove that from your meal.
