Italian-Inspired French Onion Soup

Today, I’ll show you how to make this classic dish with an Italian twist by using Tomato Bouillon instead of beef stock. If you follow along, at the end of this article, you will be able to enjoy this rich and delicious Italian-Inspired French Onion Soup.

List of Ingredients

  • 6 onions
  • 8 cups of water
  • 1 teaspoon of sugar
  • 1/3 teaspoon of salt
  • 2 bay leaves
  • 1/2 teaspoon of dry Thyme (of if you have fresh Thyme, use 1 tablespoon)
  • 2 tablespoons of butter
  • 4 cubes of chicken stock with tomatoes
  • 6-8 slices of toast (ie French baguette, Italian bread or any kind of bread that you like)
  • 1-2 cups of shredded Mozzarella cheese for the toast (or you can use Parmesan)

How to make the Italian-Inspired French Onion Soup

1. Cut the onions in half, then cut them into thin wedges

2. Mince the garlic cloves into tiny pieces

3. Heat up about 1 tablespoon of olive oil at Medium heat in a pot and add the onions until they become translucent, about 15-20 minutes

4. Add 2 tablespoons of butter to the pot and continue to stir for another 15-20 minutes

5. Sprinkle in the sugar and salt to the pot and cook until the onions are browned for about 10-15 minutes.

6. Add the minced garlic and cook until it becomes aromatic

7. Pour about 1 cup of water (out of your total of 8 cups) into the pot to deglaze the bottom. Alternatively you can just add 1 cup of stock.

8. Add the remaining water and 4 cubes of tomato infused chicken bouillon cubes, thyme and bay leaves. Alternatively, you can just add about 7 cups of stock.

9. Bring to a boil and decrease the heat to low. Cover the pot with a lid and let it simmer for about 30-40 minutes.

10. Check the taste and if needed, add some salt and pepper to the soup.

11. Spread a thin layer of olive oil on your bread and sprinkle the cheese on top. Bake it in the oven right before serving your meal until the surface of the cheese is nicely melted.

12. Pour the soup in a bowl and add the toast from step #11 on top.
