Chicken and Vegetable Soup

Ingredients:

  • 2x Carrots
  • 1/3 pound of ground chicken
  • 2 Cups of Water
  • 1 Pack of Chicken Stock
  • 1/3 of a can of corn
  • 1 Onion

Directions:

  1. Chop the carrots and onion into small pieces
  2. In a medium pot, pour in about a tablespoon of olive oil and stir-fry the onions and carrots until the onions become translucent.
  3. Add corn to the pot and mix it in
  4. Add ground chicken and stir until the meat is no longer pink
  5. Pour in 2 cups of water and turn the heat to high until the water starts to boil
  6. Turn down the heat to low and let it simmer with a lid on for about 15 minutes
  7. Add in the chicken stock
