How to Make a Japanese Cucumber Salad

If you’re looking for a great way to cool off on a hot day, this is the perfect recipe for you! This is how you can make a refreshing Japanese Cucumber Salad.

Ingredients

  • 1 cucumber
  • 1/2 teaspoon of salt
  • The flavorings:
    • 1/2-1 teaspoon of Japanese chicken stock
    • 1 teaspoon of soy sauce
    • 1 teaspoon of sesame oil
    • 1 teaspoon of crushed sesame seeds

Directions

  1. Cut the cucumber into wedges like shown in the picture below
  2. Put the cucumber wedges into a small bowl and sprinkle the salt.
  3. With your hands, rub the salt into the cucumber wedges and let it sit for about 10 minutes
  4. Take a handful of wedges and squeeze the juices out with your hands or using a cheese cloth and put the squeezed pieces in another bowl, repeat until all of the wedges are squeezed. This effectively draws out and removes most of the salt that was used in step 3.
  5. Add the flavorings into the bowl with the squeezed cucumber wedges and mix it all together.
