Garlic Chicken Alfredo

Now this is a classic Italian dish that is sure to fill you up proper. Such a hearty meal, and yet, it feels like you can just keep eating it endlessly. That’s how you know you did it right. The flavor in this dish is just fantasico! The strong flavor of the garlic chicken combines perfectly with the creamy cheesy alfredo to make your taste buds beg for more. The Penne holds the sauce perfectly to make sure each bite is as creamy as the next. And the parsley adds just enough of that herby aftertaste, while also really enhancing your meal’s presentation. You can also add some Locatelli cheese to top it all off, if that’s your fancy (it’s definitely mine haha).

Ingredients (2 servings)

  • 4-5 cloves of garlic
  • 1-2 tsp. of olive oil
  • 1/2 pound of penne
  • 1 tbsp. fresh parsley
  • 1 tbsp. pecorino romano
  • 1 jar of alfredo sauce
  • 1 chicken breast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Directions

  1. Chop the garlic into fine pieces
  2. Chop up the chicken breast into bite size pieces
  3. In a separate pan, pour the olive oil and garlic pieces on low heat
  4. Once the garlic becomes aromatic, add the chicken pieces and cook until they’re lightly brown in the pan.
  5. Add in the alfredo sauce, garlic powder and onion powder and turn the heat to medium.
  6. Once the sauce reaches a boil, stir so that it heats up evenly.
  7. Add in the pasta into the sauce and mix well.
  8. Salt and pepper to taste if needed
  9. Chop up some fresh parsley
  10. Serve with pecorino romano cheese and fresh parsley and enjoy!

FAQ

What kind of alfredo sauce should I use?

We use a jar of alfredo sauce to cut down the amount of time it takes to make the sauce. We like to use Bertolli’s Alfredo sauce (link below). If you prefer to make your own alfredo sauce at home, you can certainly do so with butter, flour, milk and chicken stock – it adds a bit of time to cook this dish, but you can’t go wrong with homemade rue either. Tasty!

Where can I get the fresh produce?

You can get the garlic, chicken, and fresh parsley from your local grocery store or local Wholefoods. I have posted the links to Amazon/Wholefoods below for your convenience:

What kind of cheese should I use?

I personally like to use Pecorino Romano by Locatelli. I find this to be an amazing choice when it comes to making this dish, because it has salt crystals in the cheese. This really pumps up the flavor – especially if you choose to boil the pasta in salt water.
