Miso Soup with Vegetables and Tofu

Do you want to make a delicious bowl of miso soup with veggies and tofu? Here’s the perfect recipe for you!

Ingredients for Miso Soup (2 servings)

  • 2 tsp miso
  • 1 tsp soy sauce
  • About 5 leaves napa cabbage
  • 1/2 of tofu
  • 1 bunch green onions
  • 4 cups water
  • 1 tsp hondashi dashi stock
  • 1/2 tsp konbu dashi stock

How to make Miso Soup

  1. Cut up the green onions into 1 inch length pieces and separate them into white parts and green parts.
  2. Chop the napa cabbage into bite size pieces, separate them into white parts and leafy green parts.
  3. Cut the tofu into bite size cubes.
  4. Boil the water in a pot
  5. Add the white parts of the napa cabbage and white parts of green onions into the pot, cook for about 5 minutes
  6. Sprinkle the hondashi dashi stock and konbu dashi stock into the pot and mix.
  7. Add the tofu, green parts of green onions, and the green parts of napa cabbage.
  8. Lower the heat to low and boil until the vegetables are cooked (about 5-10 mins)
  9. Add the soy sauce and mix
  10. Use a miso strainer to dissolve the miso into the soup and stir until well combined. You can use a ladle instead if you don’t have a miso strainer.
  11. Taste and adjust the amount of miso as necessary
  12. Serve and enjoy!

Do I need to use two different dashi stock?

Using multiple types of dashi stock makes this dish flavorful in my opinion. That being said, it is NOT necessary to do this to make it at home, if you don’t have them in your pantry. However, if you ever get a chance to use the two different dashi stocks, I would highly recommend it :)

Yes, this is a pescatarian dish

Is this miso soup vegetarian?

It can be, if you only use the konbu dashi stock and replace the hondashi entirely.

Is this miso soup vegan?

This is similar to the vegetarian question above, if you replace the hondashi with konbu dashi stock, it will be vegan.
